Fresh Chèvre

Our fresh goat cheese prepared in the French style, pasteurized, cultured goats milk gently ladled into bags or log molds. A soft curd, wonderful citrus acidity and creamy texture that is versatile in savory and sweet recipes.

Wine pairings: Gamay, Sauvignon Blanc
Beer pairings: Hefeweizen, Witbier

Who needs sheep for this Greek staple? Semi-soft brined cheese made with cultured, pasteurized goats milk, great in salads, omelets or with Mediterranean dishes.

A Valencay style bloomy rind cheese originating in central France. Pasteurized goats milk with a semi-soft curd and smooth interior contrasts with black ash layer and bloomy white exterior.  Ash lends a sweetness to the cheese.

Cave-aged cheeses

Tanasai Tomme

Tanasi Tomme

A cheese originating in the style of Tomme de Savoie in the French Alps. Semi-soft Pyrenees style, unpasteurized goat milk, natural rind. This cheese has an earthy body, with hints of parmesan. Tanasi derives its name from the native American word for Tennessee.

Wine pairings: Cabernet Franc, Un-Oaked Chardonnay
Beer pairings: Bire de Garde, Brown Ale

Parker 

A traditionally dutch style originating in Gouda (How-Da) Netherlands. Named for Bobby Dru Parker who was born in the log cabin that was located in our pasture. He became a dairyman in California and made Gouda style cheese at his dairy. This award winner is from unpasteurized goat milk. Washed curd lends a sweetness to the cheese which has small holes from the culture. Raw goats milk with a semi-firm curd, great caramel and nut notes—cave aged 3-4 months.

Wine pairings: Petite Syrah, Gewurztraminer
Beer pairings: Pale Ale, Brown Ale

Mooleen

Sixty percent of the worlds’ cheese sales are Gouda, with that in mind we know you will enjoy our exemplary version of this world famous cheese. Gouda style unpasteurized Jersey cow milk named for our original cow, Eileen. Now she and her daughters, contribute their rich, buttery milk for this cheese. Its smooth texture dotted with small holes and slight sweet taste makes it a favorite. Beautiful, natural yellow color. Cave aged 3-4 months.

Shiloh

The famous battle of Shiloh took place 30 miles to the west of our dairy. On the 150th anniversary our cheese Shiloh was born. Unpasteurized Jersey cow milk cheese in the style of Tomme de Savoie in the French Alps. Sharp rich acidity and high tannins, both buttery and grassy, cave aged 2-4 months. Semi-firm with hints of fresh mown hay.

Wine Pairings: Malbec, Zinfandel
Beer Pairings: Brown Ale, Lambic

Cheddar

No sense calling it something else.  A blend of goat’s milk and cow’s milk bring the best of both worlds to our cheddar style wheel. A raw milk cheese aged three months to achieve a creamy, buttery and slightly nutty cheese. Pairs well with dried fruits or your favorite cheese recipes. A customer favorite. Delicious.

Two Tomme

Two milks (goat and cow) unpasteurized, a perfect blend of two flavor profiles, giving this classic European style cheese a unique character. Natural rind, semi-firm, nutty. Pair with apples, walnuts and dates.
